The response time is already logged. Check the 5 numbers after the server name, those are respectively :

• the request time
• the queue time
• the connect time
• the response time
• the total time (including data transfers)

Take a look at doc/haproxy-en.txt near the end, there are examples.

You cannot customize logs very much however. You can just set basic format, extended tcp log format and http log format. In this last mode, you can capture some headers and that's all.
